[Using Sakai] user IDs != Sakai login ID

I see a database table SAKAI_PERSON_T with fields for lots of additional information about users, but don't see these fields in the admin login users information tool. How are these set, managed, used?

We like using student Emails for logins, but in grading and grade reporting we always use an actual student ID number.

I don't see any additional field to indicate a University ID number, separate from the Sakai user login ID - how do others handle this?
