FYI: The demo is using 7.0.21 and the current setting in master/pom.xml is:

<sakai.tomcat.version>7.0.21</sakai.tomcat.version>

This is also the version in the Sakai maven repo:

http://source.sakaiproject.org/maven2/tomcat/tomcat/tomcat/

It is used in the pack-demo and should be fixed for 2.9.1.
