[Using Sakai] paper exams

You'd probably just have to add all the details you wanted a either s a
free-form comment to the gradebook item, or to the non-electronic
assignment. There wouldn't be any structure to it other than what the
instructor came up with. You'd have to copy/paste the general comment with
the description for every student then add in your additional details. It
looks like you can even import comments from the Excel/CSV file.

Typically I'd think if something is submitted on paper though it's returned
(with comments) on paper, and possibly just the point value
inserted/imported into the Gradebook as a record.
