I received the following instructions for the same problem on the Sakai-Dev listproc. I assume that if you send an email to sakai-user-request at collab.sakaiproject.org<mailto:sakai-user-request at collab.sakaiproject.org> with the word unsubscribe in the SUBJECT header - then it should work. It worked for me on sakai-dev.

Hello,
Simply sending an "unsubscribe" to the LIST address will not unsubscribe you from sakai-dev. To do so, you have two options:
1) Send an e-mail message with the subject of "unsubscribe" to:
sakai-dev-request at collab.sakaiproject.org<mailto:sakai-dev-request at collab.sakaiproject.org>
You will get a return message asking you to confirm your request.
2) Point your favorite Web browser to:
http://collab.sakaiproject.org/mailman/options/sakai-dev
Enter the e-mail address that is subscribed to the list in the box and then click on the "Unsubscribe" button in the middle of the page.
You will get a return message asking you to confirm your request.

To the many folks who have now decided that I am the reason you are not getting unsubscribed from the Sakai List-
I went and read the list archives and noted that the server changed on Thursday. Seems we all agree that change has not been smooth. If you are interested, you can read about the migration here: http://www.nabble.com/Sakai-Collab-Email-List-Migration-td22343638.html#a22343638
The short message is that they have given a new link to unsubscribe. It may not be fully active yet, but seems worth a try. The url is:
http://collab.sakaiproject.org/mailman/listinfo/sakai-user/
Almost the same as the one that I sent before and that has not worked for many people, but not exactly the same. Who knows? Might work.
If that fails, you might try an email to Peter Knoop whose contact info is on the posting describing the migration. He appears to be the person who might know what is going on.
We've got to stop meeting like this...
