Take a look at Morris Gray's TWT-Notes 
<http://twt-notes.tiddlyspot.com/>. It's a single html file with 
built-in LaTeX math editor and rendering. (I suppose you can also type 
the LaTeX yourself.) You might be able to install it in Sakai and call 
it where you need it. I haven't tried this yet, but it may meet your needs.
