[Using Sakai] first time use advice sought

The community has many ways to "try sakai", each with different
barriers to entry.

Have you looked at:
http://sakaiproject.org/portal/site/sakai-downloads
?

It recommends:
 - piloting Sakai using a commercially hosted instance with a small
number of faculty (for free!)
 - using a specially packaged "demo" distribution of Sakai on your own
servers for a small pilot
 - downloading the source code, compiling and deploying Sakai on you servers

Depending on how high each of those barriers are for you and your
particular needs for local control, you might make different
decisions.
