[Building Sakai] Requiring JDK 7 for building/running Sakai 11?

Latest OS X (Mavericks) doesn't bundle any JDK, you have to manually
download it. Windows people already have to download a JDK and will most
likely download the JDK that is promoted on
http://www.oracle.com/technetwork/java/index.html (currently JDK 7). While
some servers may be running JDK 6 are there really that many that don't
have the option of running JDK 7?
