[Building Sakai] Sakai 2.8.0 Out of memory errors

Hallo

We have sakai 2.8.0 in production and in December 2012 we patch the Assignment
tool to correct the resubmit error. We also implement a third application node.
Now in January we're getting a lot of out of memory errors causing the
applications to die. We just realize that our db is on latin1 and not UTF8 can
this cause some connection errors and eventually out of memory errors?
