Not currently. 

You can certainly repurpose the existing fields though, by just changing the label in the properties so it looks like it does something else, however it would be nice to be able to set the list of fields that a user can fill out, and their groupings/order. 

Some background: When Profile2 was conceived, the original idea was that it would just drop in and replace the classic Profile and use the same backend, but add additional features. We've come a long way since then and it seems this might be the next big step, but will involve a bit of re-engineering of the backend to allow for customisable fields.

I've flagged this in JIRA as http://jira.sakaiproject.org/browse/PRFL-390 but it will be some time before I can work on this. If you'd like to contribute to this, get in touch!
