[Building Sakai] Recommanded OS X dev setup...

Greetings folks,

We are moving our development on the Mac OS X (Snow Leopard 10.6.1).

In order to avoid compatibility issues with Sakai, I'm looking for a
recommended setup for Mac.

For instance, which version of Java : 1.5 or 1.6, Eclipse Cocoa or Carbon,
32 or 64 bits, etc.
What about eclipse plugins : Maven plugin, subclipse plugin.

Here, I address the Macintosh fans of the Sakai's community.
