[Building Sakai] 2.7.0: Profile2 v Profile

Nothing against Steve or Adrain, but it seems that we have *never* made a problem-free "1 to 2" transition.  The prudent approach is to add the new, make it the default, and then remove the old in the next release (i.e. 2.8).

-1 to deleting profile1 from the 2.7 build.
