[Building Sakai] database and new tool

Disclaimer: These are hibernate specific questions so you may get
better answers on their forums.

There are no hard and fast rules but I would recommend you create a
new hbm.xml file and a new class for each table. If you have never
used hibernate before you will want to check out the documents on
hibernate.org
