[Deploying Sakai] java.lang.OutOfMemoryError: GC overhead limit exce eded

this error indicates the -Xmx is too small.  For production, I would set it
to 2500m at least and depending on how many users you need to support, to
4g or more (for us, we usually go to 6g, but that's on Linux for
high-volume usage).  I would also consider removing the new size settings
to fall back to the default of -XX:NewRatio=3 (although setting to 5 is
also an option)
