[Deploying Sakai] Creating a snapshot of search segments?

Currently we have a production setup and a staging setup. Before
deploying a new build to our production service we test it on the
staging service. When doing this we take a snapshot of the DB and
uploaded content and use this to startup the staging environment.

How should we be taking a snapshot of the search segments so that it
starts up correctly? We don't want to shutdown the live service just
to take a snapshot.
