[Portfolio] Changing Matrix Owner?

You can't change the owner of a matrix through the UI.
The osp_scaffolding table has a column for the owner of each matrix.
Presumably, you could change the ownerId there to the user id for
another user...one still around.

Why do we display the owner name to students? Do they care? I somehow
doubt they do.
