An alternative option for just trying out Sakai's functionality is to sign up for an account with one of the 'demo' instances provided by vendors: http://sakaiproject.org/hosted-online-trial

I'd encourage you to try Longsight's version because I am obviously biased! :)

If you'd prefer to push forward with the demo version, I assume you've already seen this page: http://source.sakaiproject.org/release/2.7.1/

Any modern computer that can support those technologies will probably give you a good idea of Sakai. I find Macs provide a much easier setup than PCs, but there's another bias of mine! 

The key thing you'll need to do is set your JAVA_OPTS. That info is included with the requirements for the 'source' version of Sakai, which details what you'd need for a production environment: http://confluence.sakaiproject.org/display/DOC/Install+Guide+-+Source+Install+%282.7%29
