The view date will do what you need I think. By default, the view date
is exactly equal to the close date. However, if you enable this option
(Use view date for evaluations, otherwise just use the due date) then
you can set the date separately for the evaluations. By default, all
users share the same view date, however, if you disable this option
(Use same view date for all users (or use separate dates for students,
instructors, admins)) then you can set the date independently for
admin, instructors, and students.
