[Using Sakai] Is there a way to only show an entry in LessonBuilder to Instructors?

Depends. Do you want the instructors to interact with the content as
students, or just restrict visibility of the content items from students?

If the latter, you can edit a Lessons page (or sub page) so that it is
*not*visible to students (but will be to instructors). The following
options are
available within More Tools > Settings in a Lessons page/subpage:

   - Don't Release Page Until All Prerequisite Pages are Completed
   - Hide this page from users (page will not appear in left margin)
   - Hide page until following date (page will appear but user will get an
   error)

The second way, which may be what you're looking for (but not the most
ideal) is to make a group in Sakai of everyone *but* the students, then
release specific items/entries added (via Add Multimedia, Text, Resources,
Assignments and Tests and Quizzes) just to that group. In this option, you
don't need to worry about any of the other settings mentioned above (you
could potentially have a page with 'mixed content').
