[Using Sakai] Courses question

Hi all,

Currently our teachers go to Worksite Setup, choose course site, then choose
a term, and then go to the drop-down of courses but there is nothing there
listed so they click "still can't find course/selection?", then they input
course, section etc. but they aren't "approved" for a roster.  So, they
finish up and add their students as participants.

I guess what I would like to do is take away the course and section number
and just make it simple course title like "Geography 7th" or "English 9",
but I also don't know where I can make them an "instructor of record".  I
was wondering how I would accomplish this?
