[Using Sakai] Helpdesk and Administration in Production/Pilot deployments

Hello all,

We are wondering how the other member of the community manage the 
administration, configuration and helpdesk of the sites in production or 
pilot deployment.
What do you do when you need to modify a permission for all the existing 
sites and the next to come ?
How do you manage the helpdesk team ?
Do you use SakaiAdminX, the webservices, Quartz jobs or any other tool ?

This information will really help us chose.
