[Building Sakai] LTI roles in portfolio sites

It looks like in the code, if the user is in the maintain role for the site
they get Instructor, otherwise they get Learner. For a porfolio site realm
the default maintain role is "CIG Coordinator" Any other custom mapping or
logic seems like it would require some code changes.
