Hope you dont mind but I've cc'd this to the sakai-dev list as it's more relevant to your question; its archives are searchable via Nabble if you're not already a member. 

We've (kind of) done this and if people think that it's a good thing then we can talk about supplying a patch for 2.8 & 2.10. I hesitate to promise anything  because I'm not sure whether our code is suitable for contribution as we had a very specific use case - term dates, not dublin core but I'm sure the principle is the same. 

The current dublin core meta data doesn't seem to surface in the UI, we use it via Entity Broker, I think via the search tool. How did you want to use it?

This is my first email to this list, so please be lenient if it has been
answered before.

I have been evalutating Sakai (v2.6.x/2.7.x) for some time now, and I
was wondering if there is an easy way to introduce custom metadata
fields (ie Dublin Core metadata) to the resources page, under the "Edit
Details -> Optional Properties" tab.

Furthermore, I thing it would be a good enhancement if Sakai could use
searchable rich metadata to describe a whole site/course...

The functionality is there, so it should be fairly easy to be
extended/customized!
