Hi Adam,
1) We have a similar solution implemented with WIRIS (http://www.wiris.com/). It's very user friendly and doesn't use any special markup to enter equations. It uses a Java applet instead.
2) It does not support this as far as I know.

Two questions:
1/ Has anybody integrated the TinyMCE equations editor with Mneme? (http://www.codecogs.com/latex/integration/tinymce/install.php)
2/ if so, can one use a fill-the-blanks question with an equation, ie, having bits of the equation missing for users to fill in?
