Try using this setting in sakai.properties:

domain at org.sakaiproject.user.api.UserDirectoryProvider=tue.nl

this should give e-mail addresses like:

EID at tue.nl

instead of:

EID at campus.tue.nl

Unfortunately, it's not any more flexible than that.
