[Building Sakai] Sakai 2.7.0 cpu issues

I've been watching 'top' and java slowly crawls up to 75% CPU over a few days, then spikes to 100% and back down to 75% and back up to 100% ....
memory seems to hole between 35-38%.
 
any ideas ?  When you're using it, you can actually 'feel' the system studder when it spikes to 100%
