Columbia's approach a few years ago was to do a few rsyncs from
snapshots (we use NetApps) while Sakai was running before declaring a
downtime to do the final sync of the live files while Sakai was
offline. If you have a lot of untouched/non-volatile content (perhaps
from old courses), your final sync's downtime could be very short.
